Ram hến là món ngon gia đình quen thuộc, có thể dùng ăn vặt với tương ớt, nước mắm hoặc ăn với bún chan nước mắm đều rất ngon. Mua thịt hến đã làm sạch về chỉ việc rửa lại rồi vắt ráo. Ngâm nấm mèo (mộc nhĩ) trong nước cho nở, rồi rửa sạch nấm, cắt sợi. Gọt vỏ cà rốt, bào sợi.
Cho hến, thịt nạc xay, nấm mèo, cà rốt, hành tây cắt nhỏ vào tô. Nêm 2 muỗng cà phê nước mắm, 1/4 muỗng cà phê muối, 1/4 muỗng cà phê bột ngọt, 1 muỗng canh dầu hào, xíu tiêu. Mang găng tay trộn đều lên.
Cách cuốn ram hến: Nhúng bánh tráng cho ướt rồi múc nhân vào gói lại theo kích cỡ miếng bánh (bánh hình chữ nhật nên gói xéo). Bánh tráng này lâu mềm nên nhúng trước 2-3 cái rồi bắt đầu cuốn ram hến. Cuốn lần lượt từng chiếc ram hến đến khi hết nguyên liệu.
Bắc chảo lên bếp rồi cho dầu vào. Khi dầu nóng thì cho ram hến vào chiên nhỏ lửa. Lật trở đều mặt để ram hến chín vàng đều. Sau đó, vẩy ram hến cho ráo dầu rồi dọn ra đĩa ăn cùng rau sống, nước mắm tỏi chua ngọt hoặc tương ớt tùy thích. Chúc bạn làm ram hến thành công và ăn ngon miệng nhé!
